With the prospect of being in a bikini in just over a month’s time, I have been trying to eat as healthily as possible. Our main meals are usually pretty good but I just can’t resist something sweet in the evening so decided to make these good-for-you puddings.
They remind me of a kind of rice pudding and I personally love the mix of banana and peanut butter. Some chocolate chips or cocoa powder would work really well in this too but I am keeping up with no chocolate for lent!
2 teaspoons of peanut butter (or another nut butter)
175ml of almond milk
1 tablespoon of chia seeds (I used white ones)
How to make it
- Mash your banana then add the peanut butter and almond milk
- If you don’t mind bits, then blend by hand but if you want a smoother pudding then blitz in a blender
- Stir through the chia seeds
- Pour into glasses and chill in the fridge for a couple of hours
- Enjoy chilled
