Whilst trying to go sugar-free, I was on the lookout for really healthy recipes that were tasty. This salad is one that I have made a few times since and always really enjoyed. There is a fair bit of prep and grating involved but it is most definitely worth it for a crunchy, colourful and flavourful meal.
Half a red onion, finely chopped
2 courgettes, grated
2-3 carrots, grated
The juice of one lemon
Salt and pepper
A drizzle of olive oil
One tray of king prawns
2 garlic cloves, finely chopped
A handful of fresh coriander, roughly chopped
How to make it
- In a large bowl, add the onion, courgettes and carrots
- Squeeze the juice of one lemon over the top, season well and mix
- In a small frying pan, heat the oil and lightly fry the prawns and garlic for a few minutes
- Tip into the bowl with the salad in, add the coriander and give a final stir
- Serve immediately!
I’ve also tried adding radishes, fennel, spring onions and cucumber to this and, if you aren’t trying to stick to a sugar-free diet, a drizzle of sweet chili sauce works a treat too!
