I have mentioned I am trying to be good and shift a few pounds for our Wedding/ Summer Holiday and so I have swapped my usual lunch of a sandwich, crisps and snacks for a much healthier salad.
However, I have found that it is very easy to get bored of having the same, or at least very similar, food everyday so I have been mixing it up a bit and experimenting with different salads and ingredients.
Today’s recipe is so easy it isn’t really a recipe but more of a shopping list should you want to recreate a lovely oven-roasted dish in less than 5 minutes.
A jar of grilled antipasto, which is available in most supermarkets. The lovely thing about these little jars is that all the prep and cooking has been done for you, there is a great selection of ingredients inside (mine included peppers, gherkins, olives, tomatoes, artichokes, onions, mushrooms and capers) and the vegetables usually come in a delicious herb-infused oil meaning you don’t have to worry about a salad dressing either!
I simply prepared a bowl of fresh salad (I only had lettuce and cucumber in my fridge!), drained the vegetables and drizzled over a little of the flavoured oil.
All that was left was a quick mix then a few pieces of goat’s cheese on top…delicious and so simple!
