I’m not a religious person but I have no problem celebrating a day that gives you an excuse to eat delicious pancakes for any meal you fancy!
In the interest of blogging only (ahem), we had our pancakes yesterday and may also be having some more after dinner tonight too…they should not simply be limited to one day a year anyway!
Before you start gathering your ingredients and toppings, you have a very important pancake-related decision to make:
Do you go for a stack of fat, fluffy American style pancakes drizzled in maple syrup or a plate of thin, crispy crepe-like ones with the classic lemon and sugar combination?
For me, I like to go for a traditional and thin pancake but with a variety of toppings. This is third year running that I have simply made a big bowl of batter and made different pancakes throughout the evening, with savoury followed by sweet toppings.
It is a perfect excuse to get your friends over for a “Pancake Party” as you can simply fill lots of little bowls with different toppings and allow people to make their own combinations and have as many as they like!
I didn’t want to make this post into a recipe as most people have a basic pancake recipe in their repertoire, but if in doubt then just Google it and Delia, Nigella, Hugh or Jamie should be able to help!
This year, we started with a couple of chorizo, mushroom and cheddar pancakes which were delicious.
Then, I raided the cupboards and made up a few new combinations. Because we have been away, we were lacking slightly in fresh fruit so my pancake ideas are not the healthiest!
My two new favourites are:
Dulce de Leche and Chopped Nuts
Peanut Butter and Maple Syrup
Our neighbouring village is having a pancake race this week which I cannot resist popping along to, as a spectator, not competitor I must add!
