Recipe – Bacon and Sweetcorn Chowder

It has been another day at home for me, this time on strike. I don’t want to get into politics on this site but events today have certainly provoked some interesting debate. My task for the day was to finish writing my batch of reports which I finally did about an hour ago *high five*

Today’s recipe is a variation on a seafood chowder I like to make, with the salty smoked haddock being replaced with smoked bacon this time. It is a lovely, chunky, rustic soup packed full of flavour.

It is also part of my mission to avoid the dreariness of sandwiches for my lunch every day!


A dash of olive oil

4-5 slices of smoked bacon, chopped into pieces

2 onions, chopped (I used red onions to add some colour…and they were the only ones I had too!)

2-3 potatoes, chopped

400ml of stock (I used chicken)

400ml of milk

1 large tin of sweetcorn, drained

A pinch of mixed herbs

Salt and pepper for seasoning

How to make it

  • Heat the oil in a large pan and fry the bacon for a few minutes until it turns pink
  • Add the onions and potatoes and cook on a medium heat for about 5 minutes, or until the onions have softened
  • Add the stock and milk then cook for about 10 minutes on a low heat until the potatoes have softened
  • Add the sweetcorn and mixed herbs and stir well
  • Season to taste
  • Serve with warm, crusty bread topped with lashings of butter
