These lovely little pancakes are very easy to make and are a great canapé with some sweet chilli dipping sauce or as a starter with some salad and a salsa.
100g of plain flour
1 teaspoon of baking powder
150ml of milk
1 large tin of sweetcorn
3-4 spring onions, chopped
Salt and pepper
A pinch of chilli flakes (optional)
How to make it
- Mix together the flour, baking powder, egg and milk in a large bowl and whisk until there are no lumps
- Add the sweetcorn, spring onions, seasoning and chilli and mix well
- In a large frying pan, heat some oil and then spoon the sweetcorn mixture into the pan, forming small pancakes
- Fry for a few minutes on each side until golden brown and then turn over and cook for the same amount of time on the other side
I made these in advance and then warmed on a low heat on an oven tray before serving…delicious!
